Instructions
Prepare the Batter
In a large bowl, whisk together flour, baking powder, salt, and black pepper. In a separate bowl, beat the eggs and milk until well combined. Pour the wet ingredients into the dry mixture and stir until just combined — the batter should be thick but spoonable.
Add the Corn
Fold in the corn kernels, green onions, and parsley (if using). The mixture should be well coated but not runny.
Heat the Pan
In a large skillet, heat about 2 tablespoons of oil over medium heat until shimmering.
Cook the Fritters
Drop spoonfuls of batter (about 2 tablespoons each) into the hot oil. Flatten slightly with the back of the spoon. Fry 2–3 minutes per side, or until golden brown and crisp around the edges.
Drain and Serve
Remove the fritters with a slotted spatula and drain on paper towels. Sprinkle lightly with salt while hot.
