Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 large eggs
- ½ cup milk (or buttermilk for extra flavor)
- 2 cups corn kernels (fresh, canned, or frozen and thawed)
- 2 tablespoons chopped green onions (optional)
- 2 tablespoons chopped parsley (optional)
- Oil for frying (vegetable or canola oil works best)
Instructions
- Prepare the Batter
In a large bowl, whisk together flour, baking powder, salt, and black pepper. In a separate bowl, beat the eggs and milk until well combined. Pour the wet ingredients into the dry mixture and stir until just combined — the batter should be thick but spoonable. - Add the Corn
Fold in the corn kernels, green onions, and parsley (if using). The mixture should be well coated but not runny. - Heat the Pan
In a large skillet, heat about 2 tablespoons of oil over medium heat until shimmering. - Cook the Fritters
Drop spoonfuls of batter (about 2 tablespoons each) into the hot oil. Flatten slightly with the back of the spoon. Fry 2–3 minutes per side, or until golden brown and crisp around the edges. - Drain and Serve
Remove the fritters with a slotted spatula and drain on paper towels. Sprinkle lightly with salt while hot. - Serve Warm
Enjoy them on their own, or pair with your favorite dipping sauce — sour cream, ranch, or a spicy aioli all make great companions.
