- Prepare the Batter:
- In a mixing bowl, combine 2 eggs, 50g of sugar, and 8g of vanilla sugar. Mix well until the mixture is light and fluffy.
- Add 50 ml of milk and mix until well combined.
- Pour in 50 ml of vegetable oil and continue mixing.
- Gradually add 110g of wheat flour and 16g of baking powder. Mix until you have a smooth, lump-free batter.
- Prepare the Baking Dish:
- Prepare an 18 cm casserole dish by lining it with baking paper and greasing it. Dust the dish lightly with flour to prevent sticking.
- First Bake:
- Pour half of the batter into the prepared baking dish.
- Place the dish in a preheated oven at 180°C (356°F) and bake for 15 minutes, or until the surface is set but not fully cooked.
- Add the Jam Layer:
- Remove the dish from the oven and carefully spread a layer of apricot jam (or your preferred jam) over the partially baked batter.
- Second Bake:
- Pour the remaining batter on top of the jam layer, spreading it evenly.
- Return the dish to the oven and bake for an additional 15-20 minutes at 180°C (356°F), or until the cake is golden brown and a toothpick inserted into the center comes out clean.
- Cool and Decorate:
- Once the cake is done, remove it from the oven and let it cool completely.
- After cooling, spread a thin layer of more jam on top of the cake and decorate it with chopped peanuts or any other preferred topping.
