Place the beets in a blender, add the lemon juice, and then add about 200 ml of water if you prefer a thinner consistency.
Blend everything until smooth. If desired, strain the drink through a sieve to remove any remaining solids.
Add a little honey to tone down the sourness.
Pour into a glass and drink immediately, savoring its flavor and beneficial effects.
Notes: The drink can be stored in the refrigerator for up to 24 hours, but it’s best to drink it fresh.
