Preheat the oven to 160°C (thermostat 5-6).
Prepare the meat: Cut the pork into pieces if necessary. Salt and pepper the pieces of meat.
Heat the oil in a large ovenproof casserole dish. Add the meat and brown it on all sides for about 10 minutes.
Remove the meat and set aside. In the same casserole dish, add the chopped onions and chopped garlic. Brown until translucent.
Deglaze with the beer: Pour the beer into the casserole dish to loosen the cooking juices, then add the mustard, maple syrup, thyme and bay leaf.
Return the meat to the casserole dish and cover. Leave to cook in the oven for 2 to 3 hours, basting the meat from time to time with the sauce.
Check the cooking: The meat should be tender and easily separated with a fork. If the sauce is too liquid, you can let it reduce over low heat on the stovetop before serving.
Serve hot, accompanied by mashed potatoes, roasted vegetables or rice.
Tip:
If you want an even creamier sauce, you can add a spoonful of cold butter at the end of cooking to thicken the sauce.
This braised pork with beer and maple syrup is a rich and comforting dish that will delight your guests during your festive meals.
