Ingredients:

  • 3 medium-sized zucchinis (approx. 600g or 1.3 lbs)
  • 5 large eggs
  • 5 tablespoons Parmesan cheese (approx. 40g or 1.4 oz)
  • Salt to taste
  • Olive oil for greasing
  • 2 tablespoons finely chopped fresh parsley
  • 250g (8.8 oz) cream cheese (Philadelphia or similar)
  • 200g (7 oz) cooked ham (or substitute with vegetables/thinly sliced tomatoes for a vegetarian option)

Instructions:

  1. Prepare the Zucchini:
    • Preheat your oven to 200Β°C (392Β°F).
    • Wash and grate the zucchinis using the large holes of a grater.
    • Sprinkle the grated zucchini with salt, mix, and place in a strainer to drain excess water.
