Instructions:
Preheat Oven:
Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
Assemble the Bake: Layer the bottom of the prepared dish with half of the rye bread cubes.
Top with half of the corned beef, sauerkraut, and Swiss cheese.
Drizzle with half of the Thousand Island dressing.
Repeat Layers: Add another layer of the remaining bread cubes, corned beef, sauerkraut, and Swiss cheese.
Drizzle with the remaining Thousand Island dressing.
Prepare the Topping: Pour melted butter evenly over the top of the casserole. Sprinkle with shredded cheddar cheese and optional caraway seeds.
Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
Serve:
Let cool for a few minutes before slicing and serving.
