1. Prepare the Potatoes
1. Preheat your oven to 425°F (220°C).
2. Boil the baby potatoes in a pot of salted water for 15–20 minutes, or until fork-tender. Drain and let cool slightly.
3. Arrange the potatoes on a baking sheet. Use the back of a fork or a potato masher to gently smash each potato.
2. Season and Roast the Potatoes
1. Drizzle the smashed potatoes with olive oil and melted butter. Sprinkle with garlic powder, smoked paprika, salt, and pepper.
2. Roast in the preheated oven for 15 minutes.
3. Remove the potatoes from the oven, sprinkle with cheddar and Parmesan cheese, and return to the oven for another 5–10 minutes, or until the cheese is melted and bubbly.
3. Cook the Ribeye Steak Bites
1. Heat olive oil in a large skillet over medium-high heat.
2. Season the steak cubes with smoked paprika, salt, and pepper.
3. Add the steak bites to the skillet in a single layer and sear for 2–3 minutes per side, until browned and cooked to your desired doneness.
4. Reduce the heat, add butter and minced garlic, and toss to coat the steak bites in the garlic butter. Remove from heat.
4. Assemble and Serve
1. Plate the cheesy smashed potatoes and top with fresh parsley for garnish.
2. Serve the garlic butter ribeye steak bites alongside the potatoes.
