Ricotta and Apple Bundt Cake


👨‍🍳 Instructions:
1. Prepare the apples:

Peel the apples and cut them into small cubes.

Place the cubes in a bowl, add 1 tablespoon of sugar and the juice of half a lemon.

Mix well and let rest for a few minutes so the apples can absorb the flavor and release some of their juice.

2. Whip the eggs:

In a large mixing bowl, beat the eggs with the sugar until the mixture is pale and fluffy.

This step is key to achieving a soft and airy cake.

3. Add the other ingredients:

Add the sunflower oil and grated lemon zest. Mix well.

Incorporate the ricotta and continue mixing until fully combined and smooth.

Sift the flour and baking powder together, then gradually add to the batter, mixing gently to avoid lumps.

4. Incorporate the apples:

Add the apples along with their juices to the batter.

Mix gently to evenly distribute the apple pieces throughout the mixture.

5. Prepare the pan:

Butter and flour a 24–26 cm Bundt cake pan (or similar ring mold).

Pour the batter into the prepared pan.

Optionally, sprinkle the top with a tablespoon of sugar for a crunchy crust.

6. Bake:

Preheat your oven to 180°C (350°F).

Bake the cake for about 40 minutes.

Check doneness with a toothpick: if it comes out clean, the cake is ready.

The top should be golden and lightly crisp.

7. Cool and serve:

Let the cake cool in the pan for about 10 minutes.

Then remove it from the mold and let it cool completely on a wire rack.

Optionally, dust with powdered sugar for an elegant finish.
