1. Preheat your oven to 200°C (400°F).
2. Prepare the vegetables: In a large bowl, toss the zucchini, bell peppers, and cherry tomatoes with 2 tablespoons of olive oil, minced garlic, herbes de Provence, salt, and pepper. Make sure the vegetables are well coated.
3. Arrange the vegetables: Spread the seasoned vegetables evenly on a baking sheet lined with parchment paper.
4. Prepare the sea bream: Rinse the sea bream under cold water and pat dry with paper towels. Make diagonal cuts on each side of the fish. Season the inside and outside of the sea bream with salt, pepper, and 2 tablespoons of olive oil. Place a few lemon slices inside the fish to add flavor.
5. Add the sea bream: Place the sea bream on the baking sheet, in the center of the vegetables.
