– 4 egg whites
Directions:
1. Start the Base: Add milk, vanilla, 60 g sugar, butter, and cornstarch to the Thermomix bowl. Set the Thermomix to 10 minutes at 100°C on speed 3.
2. Cool and Freeze: Once the mixture is done, pour it into a freezer-safe container. Allow it to cool to room temperature before placing it in the freezer for at least 4 hours. This step is essential for achieving the right texture.
3. Prepare the Egg Whites: Clean the Thermomix bowl and add the remaining 40 g of sugar. Grind it on speed 10 for 10 seconds. Then insert the butterfly attachment, add the egg whites, and set the Thermomix to 8 minutes on speed 3 to beat them until stiff. This will give the ice cream its light and airy texture.
4. Combine Everything: Remove the frozen cream from the freezer and cut it into small pieces. Add these pieces into the Thermomix bowl along with the stiff egg whites. Mix everything for 45 seconds on speed 3. This will blend the ingredients together and give you that creamy, smooth texture reminiscent of Burger King’s Sandy Ice Cream.
