Pat the scallops dry with paper towels and season with salt and pepper.
In a large skillet, heat the olive oil over medium-high heat. Add the scallops in a single layer and sear for 2-3 minutes on each side until golden brown and opaque. Remove the scallops from the skillet and set aside.
In the same skillet, add the butter and garlic. Sauté for 1-2 minutes until the garlic is fragrant.
Pour in the white wine and lemon juice, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a simmer and cook for 3-4 minutes until slightly reduced.
Return the scallops to the skillet and spoon the sauce over them. Cook for an additional 1-2 minutes until heated through.
Remove from heat and garnish with lemon zest and chopped fresh parsley before serving.
