Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the chopped rhubarb, 1 cup of sugar, and cornstarch. Stir until the rhubarb is well-coated and set aside.
In another bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.
Add the melted butter, milk, and vanilla extract to the flour mixture. Stir until everything is well combined and smooth.
Pour the rhubarb mixture into a greased 9×13 inch casserole dish.
Spread the dough mixture evenly over the rhubarb.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the rhubarb is bubbling.
Let cool slightly before serving.
Variations & Tips
For a slightly different flavor, you can add a handful of strawberries to the rhubarb mixture. Some people also like to sprinkle a bit of cinnamon or nutmeg into the topping for an extra warm spice. If you’re looking to cut down on sugar, you can reduce the amount used in the filling without compromising too much on flavor.
