Directions
Grease your slow cooker with a bit of the melted butter.
Layer the lemon slices evenly on the bottom of the slow cooker.
Place the cod fillets on top of the lemon slices, making sure they don’t overlap.
In a small bowl, mix together the remaining melted butter, olive oil, minced garlic, chicken broth, salt, and pepper. Pour the mixture over the cod.
Cover and cook on low for 2–3 hours, or until the fish flakes easily with a fork.
Once done, sprinkle fresh parsley over the cod for added flavor and color.
Serve with the lemon slices and spoon extra sauce from the slow cooker over the top.
Variations & Tips
Add a splash of white wine to the broth mixture for extra depth.
Want a little heat? Sprinkle in some red pepper flakes.
Substitutes: Try halibut, haddock, or any firm white fish instead of cod.
For a one-pot meal, add baby potatoes and green beans around the fish before cooking.
