1 pound lean cubed chuck beef, at room temperature
4 cups beef broth
1 cup red wine (optional)
3 carrots, sliced
3 stalks celery, sliced
½ cup roasted bell peppers, chopped
2 potatoes, peeled and diced
1 yellow onion, chopped
2 cloves garlic, minced
1 bay leaf
3 sprigs fresh thyme or 2 tsp dried thyme
¼ cup all-purpose flour
Olive oil
Salt and pepper, to taste
