Follow these steps to prepare your Smothered Pork Chops:
1. Season the Pork Chops
Coat the pork chops evenly with the salt, pepper, paprika, garlic powder, onion powder, oregano, thyme, and adobo. Set aside while you prepare the remaining ingredients.
2. Prepare the Baking Dish
Butter a 2-quart baking dish to keep everything from sticking.
3. Brown the Pork Chops
Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the minced garlic, then sear the seasoned pork chops until both sides develop a nice brown color. Remove from the skillet and set aside.
4. Make the Mushroom Sauce
Add the remaining 2 tablespoons of butter to the same skillet and cook the sliced onion until softened. Stir in the cream of mushroom soup and milk until combined. Set the sauce aside.
5. Assemble and Bake
Arrange the thin potato slices evenly across the bottom of the buttered baking dish. Place the browned pork chops on top, then pour the mushroom sauce over everything, spreading it out so the dish is well covered.
Cover the dish and bake at 350°F for 30 minutes, then uncover and bake for another 40 minutes, or until the top is bubbly and golden.
For a final touch, add a sprinkle of parsley if you like.
