Instructions:
Sear the Chicken
Heat olive oil in a large skillet over medium heat. Add chicken chunks and cook until browned on all sides. Remove and set aside.
Sauté Aromatics
In the same skillet, add diced onion and garlic. Cook for 2–3 minutes until fragrant and slightly golden.
Build the Sauce
Stir in chicken broth, heavy cream, tomatoes, paprika, thyme, cayenne, salt, and pepper. Bring to a gentle simmer.
Simmer Chicken
Return the chicken to the skillet. Cover and cook on low heat for 10–15 minutes until the chicken is fully cooked and the sauce has thickened.
Garnish and Serve
Sprinkle with chopped parsley and serve hot over a bed of fluffy white rice.
