Instructions:

  1. Prepare the Pork Chops:
  • Season the pork chops generously with salt and pepper on both sides.
  1. Sear the Pork Chops:
  • Heat the olive oil in a large skillet over medium-high heat.
  • Once the oil is hot, add the pork chops and sear for about 3-4 minutes on each side, until golden brown. Remove the pork chops from the skillet and set them aside.
  1. Cook the Onions and Garlic:
  • In the same skillet, add the sliced onions. Cook for about 5 minutes, stirring occasionally, until they are softened and start to caramelize.
  • Add the minced garlic and cook for another minute.
  1. Make the Sauce:
  • Pour in the chicken broth and apple cider vinegar (or white wine). Stir well, scraping up any brown bits from the bottom of the skillet.
  • Stir in the Dijon mustard and honey (or brown sugar), and bring the mixture to a simmer.
  1. Simmer the Pork Chops:
  • Return the pork chops to the skillet, nestling them into the onion mixture.
  • Cover the skillet and let the pork chops simmer in the sauce for about 15-20 minutes, or until they are cooked through and tender.
  1. Finish and Serve:
  • Once the pork chops are cooked, remove them from the skillet and set them aside on a plate.
  • Continue to simmer the sauce until it thickens slightly, if needed.
  • Spoon the sauce and onions over the pork chops and garnish with fresh herbs.
