4 bone-in pork chops, ~1 inch thick (~6–8 oz each)
1 tsp salt
½ tsp black pepper
1 tsp paprika (smoked or sweet)
1 tsp garlic powder
For the Skillet Base
2 tbsp vegetable oil or olive oil
1 medium onion, thinly sliced
3 cloves garlic, minced
For the Rich Gravy
3 tbsp all-purpose flour
2 cups (480ml) chicken broth, low-sodium preferred
½ cup (120ml) heavy cream or whole milk (for creaminess)
1 tsp dried thyme or 1 tbsp fresh thyme leaves
2 tbsp unsalted butter (adds shine and depth)
For the Potatoes
2 lbs (900g) baby potatoes, halved (quartered if large)
