1: Preheat and Prep

Grease a 9 inch cake pan or line it with parchment paper for easy removal.
2: Whisk the Wet Ingredients
In a large bowl, beat the eggs and sugar together until they’re pale and slightly foamy.
Stir in the oil, milk, and citrus flavoring until fully combined.
3: Add Dry Ingredients
Gradually mix in the flour and baking powder.
Stir just until you have a smooth batter don’t overmix.
4: Fold in the Apples
Gently fold in the diced apples. They should be evenly distributed throughout the batter.
5: Bake to Perfection
Pour the batter into the prepared cake pan and smooth the surface.
Bake for 30 to 35 minutes or until golden brown and a toothpick comes out clean from the center.
6: Cool and Dust
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Dust with powdered sugar if you like a touch of old school charm.
