In a separate bowl, heat the oil in a microwave (about 90 seconds on high) or in a small saucepan over low heat.
Once the oil is hot, stir in the sifted flour and salt. Mix well to avoid lumps.
Add the egg yolks and milk to this oil and flour mixture, then whisk until smooth. If using vanilla extract, add it now.
▪️ Incorporating the egg whites:
Take a small portion of meringue and add it to the batter to soften it. Then, gently fold in the remaining egg whites with a spatula, using an upward motion to avoid breaking the meringue.
▪️ Baking Instructions:
Preheat your oven to 150°C.
Line a cake tin (ideally a square or rectangular one) with parchment paper or lightly oil it.
Pour the batter into the tin and gently tap it on the countertop to release any air bubbles.
