Heat the olive oil or butter in a large skillet over medium heat. Add the diced onion and sauté for 2-3 minutes, until softened. Add the minced garlic and cook for an additional 30 seconds, until fragrant.
Add the Spinach:
Add the chopped spinach to the skillet, stirring to combine with the onion and garlic. Cook for 2-3 minutes, until the spinach is wilted and tender. If using chili flakes, add them at this point for a spicy flavor.
Cook the Eggs:
Push the spinach mixture to one side of the skillet. Pour the beaten eggs into the empty side of the pan. Allow them to cook undisturbed for about 1 minute, then scramble gently with a spatula, cooking for an additional 2-3 minutes until the eggs are fully cooked.
Combine and Serve:
Once the eggs are cooked through, mix them with the spinach and onion. Drizzle with soy sauce (if using) and adjust seasoning with salt and pepper. Garnish with fresh herbs if desired. Serve hot, and enjoy!
