Spinach Mushroom Orzo Recipe

Instructions:
1. Cook the Orzo:
Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to the package instructions until al dente.
Drain the orzo, reserving 1/4 cup of the pasta water, and set aside.
2. Sauté the Aromatics:
In a large skillet, heat the olive oil over medium heat.
Add the onion and sauté for 3–4 minutes until softened.
Stir in the garlic and cook for 1 minute, until fragrant.
3. Cook the Mushrooms:
Add the mushrooms to the skillet and cook for 5–6 minutes, stirring occasionally, until they are browned and tender.
4. Add the Spinach:
Stir in the spinach and cook for 2–3 minutes, or until wilted.
5. Combine Ingredients:
Add the cooked orzo to the skillet and stir to combine.
If the mixture seems dry, stir in the reserved pasta water a tablespoon at a time until it reaches your desired consistency.
6. Season and Serve:
Season with salt and black pepper to taste.
Serve hot, garnished with optional Parmesan cheese or parsley.
Tips:
For extra flavor, add a splash of lemon juice or a pinch of red pepper flakes.
Make it a heartier meal by adding cooked chicken, shrimp, or chickpeas.
