Step 1: Make the Lemonade Base
In a small saucepan, heat 1/2 cup water and the sugar over medium heat, stirring until the sugar dissolves completely. Remove from heat and let cool—this is your simple syrup.
In a large pitcher, combine the fresh lemon juice, simple syrup, and remaining cold water. Stir well to combine. Taste and adjust sweetness or water as needed.
Step 2: Infuse with Mint
Lightly bruise the mint leaves by rubbing them between your fingers or gently muddling them in the pitcher. This releases their flavor without making the drink bitter.
Let the mint steep in the lemonade for 10–15 minutes , then strain out the leaves if desired (or leave them in for a rustic look).
Step 3: Add Color and Fizz (Optional)
If using green food coloring, add 1–2 drops to achieve your desired shade of green. Stir well.
For a fizzy version, stir in sparkling water just before serving.
Step 4: Serve
Pour the lemonade into glasses filled with ice.
Garnish with fresh mint sprigs, lemon slices, or a drizzle of grenadine for a “rainbow” effect.
