Instructions:
Preheat oven to 375°F (190°C).
Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.
Season the chicken with garlic powder, oregano, salt, and pepper.
In a pan, heat olive oil and sauté the spinach and bell peppers until slightly wilted. Remove from heat and mix with mozzarella cheese.
Stuff the mixture into the chicken pockets and secure with toothpicks if needed.
In the same pan, sear the stuffed chicken breasts on medium heat for 3–4 minutes per side until golden.
Transfer to a baking dish and bake for 20–25 minutes, or until the chicken is fully cooked.
Serve hot with a side of salad or vegetables.
