Add onion and garlic, sauté until translucent.
Add ground beef, salt, black pepper, and paprika. Cook until beef is browned and cooked through.
Stir in half of the shredded cheddar cheese and parsley, mixing until cheese is melted and well combined.
Preheat your oven to 375°F (190°C).
Lay out lettuce leaves on a foil-lined baking tray.
Spoon the meat mixture onto each leaf, then roll them up snugly.
Sprinkle the remaining cheddar cheese over the top of the rolls.
Bake in the oven for 10-15 minutes, or until cheese is melted and bubbly.
Serve warm, garnished with additional parsley if desired.
