Preheat your oven:
Preheat your oven to 180°C (gas mark 6). Make sure the oven is at the right temperature before putting the cake in, this helps to ensure even cooking.
Prepare the apples:
Peel the apples and cut them into small cubes (about 1 cm on each side, for even cooking).
Immediately sprinkle them with lemon juice to prevent them from browning and to add a hint of acidity that will enhance the sweetness of the apples.
Mix the wet ingredients:
In a large bowl, beat the eggs using a whisk or an electric mixer until they become frothy.
Add the applesauce and yoghurt, then mix until smooth and homogeneous. (You can also do this with a hand blender for an even frothier texture).
Incorporate the dry ingredients:
In a separate bowl, sift together the flour, baking powder, almond powder (if using), cinnamon (optional) and pinch of salt.
Gradually add this dry mixture to the wet mixture, mixing gently with a spatula or wooden spoon until you have a smooth dough. Avoid overworking the dough so that it remains light.
