In a skillet, brown the ground beef and chopped onion over medium heat. Once fully cooked, drain any excess grease.
In a large pot, melt the cream cheese over low heat until smooth.
Add the cooked ground beef and onions to the pot. Stir in the Rotel Tomatoes, chicken broth or stock, garlic powder, and taco seasoning. Mix everything thoroughly.
Allow the mixture to simmer gently for 30 minutes, stirring occasionally to prevent sticking.
Serve hot, topped with shredded cheddar cheese and a dollop of sour cream.
