Ingredients:
2 zucchini
Salt
1 onion
1 carrot
2 bell peppers
2 tomatoes
150 grams of mushrooms
Vegetable oil
Favorite spices (smoked paprika, pepper, etc.)
200 grams of Greek yogurt
1 cup of rice
2 cups of water
Instructions:
Preparation:
Grate 2 zucchini and sprinkle with salt. Mix well and set aside.
Finely chop 1 onion.
Grate 1 carrot using a coarse grater.
Remove the seeds from 2 peppers and chop them finely.
Cut 2 tomatoes into cubes.
Cut 150 grams of mushrooms into rounds.
Cooking:
In a large frying pan, heat a little vegetable oil over medium heat.
Add the chopped onion and fry for 3 to 5 minutes until translucent.
Add the grated carrot and fry for another 2 to 3 minutes.
Add the chopped peppers and fry for another 2 to 3 minutes.
Add the sliced mushrooms and cook until soft.
Add the diced tomatoes and grated zucchini. Mix well.
Season with salt, your favorite spices, smoked paprika and pepper. Mix everything well.
Add 200 grams of Greek yogurt and mix until well combined.
Cooking rice:
Rinse 1 cup of rice thoroughly under cold water.
In a separate saucepan, heat a little vegetable oil and add the rice.
Pour in 2 cups of water and bring to a boil.
Reduce heat, cover with a lid and simmer for 10 to 12 minutes, or until the rice is cooked and the water is absorbed.
