1. Prepare the fillets
Cut each fillet in half without separating it completely, creating a pocket for the stuffing.
Stuff each fillet with a spoonful of Boursin cheese. Close and wrap the fillet with a slice of bacon or prosciutto. Secure with a toothpick, if necessary.
2. Cook the fillet
In a pan, heat the oil and butter over medium-high heat.
Brown the fillets on both sides for 2-3 minutes, until golden.
Transfer the fillets to a baking sheet and cook in a preheated oven at 180°C for 10-12 minutes, depending on thickness.
3. Make the sauce
In the same pan, add the minced garlic and deglaze with the white wine.
Add the cream and mustard, stirring well.
Add the herbs and cook over low heat for 5 minutes, until the sauce thickens slightly.
