Preheat Oven:
Preheat oven to 375°F (190°C).
Grease a muffin pan or line with paper liners.
Make Dough:
In a bowl, combine flour and granulated sugar.
Cut chilled butter into cubes using a pastry blender or your fingers until mixture resembles coarse crumbs.
Beat in egg yolk and add cold water, 1 tablespoon at a time, until dough forms.
Shape Pastry Shells:
Roll dough out on a lightly floured surface.
Cut into circles large enough to fit muffin pan. Press dough circles into muffin pan.
Make the filling:
In a bowl, whisk together the melted butter, brown sugar, corn syrup, eggs, vanilla extract, and salt until smooth.
Stir in pecans or raisins if desired.
Assemble and bake:
