1. Start by cooking the gnocchi according to the instructions on the pack. Normally, you should cook them until they rise to the surface, which should take only a few minutes. Let them drain well.
2. Heat the olive oil in a large skillet over medium to high heat. Once the oil is hot, put the cooked gnocchi in a single layer in the pan. You may need to do this in multiple rounds to avoid overfilling.
3. Let the gnocchi cook undisturbed for about 3–4 minutes until the underside is golden brown and crisp. Then turn them carefully with a spatula so that they cook evenly from all sides. This should take another 3–4 minutes.
4. If all gnocchi are crispy, put them in a bowl and mound them immediately with grated Parmesan, salt and pepper. Stir well to ensure that they are evenly covered.
5. If you use chopped fresh basil, sprinkle it over to give color and flavor.
