Prepared by  :

1. If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning.

2. Thread the ingredients onto the skewers, alternating pieces of gizzard, peppers and onions.

3. Generously brush the skewers with olive oil and season with salt, pepper and a pinch of sweet paprika for a smoky flavor.

4. Place the skewers on a very hot grill or griddle. Cook for 8-10 minutes, turning occasionally, until the vegetables are tender and the gizzards have attractive grill marks.
