Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 4 large eggs
- 1 can (20 oz) crushed pineapple, drained
- 1 tsp vanilla extract
- 1 cup all-purpose flour

- 1/4 tsp salt
- 1 cup shredded coconut (optional)
- 1/2 cup brown sugar
- 1/2 cup chopped pecans
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or a similar-sized casserole dish with cooking spray or butter.
- Prepare the Batter: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the drained crushed pineapple and vanilla extract.
- Mix Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Assemble the Bake: Spread the batter evenly into the prepared baking dish. If using shredded coconut, sprinkle it evenly over the top of the batter.
- Prepare Topping: In a small bowl, mix together the brown sugar and chopped pecans. Sprinkle this mixture evenly over the top of the batter.
- Bake: Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
- Cool and Serve: Allow the pineapple bake to cool for at least 10 minutes before serving. Cut into squares and serve warm or at room temperature.
