1️⃣ Preheat oven & prep:
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Mix dry ingredients:
In a large bowl, whisk together the flour, sugar, baking powder, salt, and lemon zest.
3️⃣ Cut in the butter:
Add the cold cubed butter. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs with pea-sized pieces of butter.
4️⃣ Add wet ingredients:
In a small bowl, whisk together the heavy cream, egg, and vanilla. Pour over the flour mixture and gently mix with a fork until a shaggy dough forms. Do not overmix!
5️⃣ Shape the scones:
Turn the dough onto a lightly floured surface. Gently knead it a few times to bring it together, then pat it into a 1-inch thick circle. Cut into 8 wedges and transfer to the prepared baking sheet.
6️⃣ Brush & bake:
Brush the tops with a little heavy cream and sprinkle with coarse sugar if using. Bake for 15–18 minutes, or until golden brown.
7️⃣ Make the glaze:
While the scones cool slightly, whisk together the powdered sugar, lemon juice, and zest until smooth. Drizzle over warm scones.
8️⃣ Serve & enjoy!
Let the glaze set for a few minutes, then serve the scones slightly warm or at room temperature.
