Directions:
Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Make the dough: In a large bowl, mix together the strawberry cake mix, vegetable oil, eggs, and vanilla extract until well combined. If desired, fold in the white chocolate chips or sprinkles.
Scoop the cookies: Using a tablespoon or small cookie scoop, drop balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake the cookies: Bake for 10-12 minutes, or until the edges are set and the tops are slightly cracked. The cookies will continue to firm up as they cool. Remove from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Serve: Enjoy these soft and chewy strawberry cookies on their own or with a glass of milk!
