Instructions

  1. Prepare the oven & pan:
    Preheat your oven to 350°F (175°C). Line a baking tray (approx. 10×15 inches) with parchment paper and lightly grease it.
  2. Make the cake batter:
    In a large mixing bowl, beat the eggs and sugar together with an electric mixer on high speed for about 5–7 minutes, until thick and pale. Gently fold in the honey (if using) and vanilla extract.
  3. Combine dry ingredients:
    In a separate bowl, sift together the cocoa powder, oat flour, baking powder, and salt. Gently fold the dry mixture into the egg mixture in batches, being careful not to deflate the batter.
  4. Bake the cake:
    Pour the batter onto the prepared tray and spread it evenly. Bake for about 10–12 minutes, or until the cake springs back when lightly pressed.
  5. Roll the cake:
    Lay a clean kitchen towel on a flat surface and dust it lightly with cocoa powder or powdered sugar. Carefully invert the warm cake onto the towel, peel off the parchment paper, and gently roll the cake up with the towel from the short end. Let it cool completely while rolled up.
  6. Make the ganache:
    Heat the heavy cream in a small saucepan until just simmering. Pour it over the dark chocolate and let it sit for 2 minutes, then stir until smooth. Add the butter if using, and stir until glossy.
  7. Assemble the roll:
    Gently unroll the cooled cake. Spread the ganache evenly over the surface, then roll it back up tightly (without the towel).
  8. Chill and serve:
    Wrap the roll in plastic wrap and refrigerate for at least 30 minutes for clean slices. Dust with cocoa powder or powdered sugar if desired, slice, and enjoy!
