Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent.
Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
Stir in the sliced red and green bell peppers, salt, black pepper, and Italian seasoning. Cook for another 5 minutes until the peppers are slightly tender.
Divide the beef and pepper mixture evenly into two individual-sized aluminum foil pans.
Top each pan with an even layer of shredded cheddar and mozzarella cheese.
Place the pans on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the cheese is melted and golden brown.
Remove from the oven and let cool slightly before serving.
Variations & Tips
For a spicier version, add a pinch of red pepper flakes or some chopped jalapeños to the beef mixture. You can also swap out the ground beef for ground turkey or chicken for a lighter option. If you prefer a different cheese, try using Monterey Jack or pepper jack for a bit of a kick. For added texture, sprinkle some crushed pork rinds on top before baking to create a crispy crust.
