3. Preheat the grill to medium-high heat. Thread the marinated shrimp, beef sirloin, red bell pepper, yellow bell pepper, and red onion onto skewers, alternating between each ingredient.
4. Grill the skewers for 3-4 minutes per side, or until the shrimp are pink and opaque and the beef is cooked to your desired doneness.
5. Remove the skewers from the grill and transfer to a serving platter.
6. Drizzle the fresh chimichurri sauce over the skewers before serving. Serve immediately with extra chimichurri sauce on the side.
