1. In a large bowl, combine olive oil, minced garlic, salt, black pepper, and paprika. Add the shrimp and beef sirloin cubes, tossing to coat evenly. Let marinate for at least 30 minutes.
2. While the meat is marinating, prepare the chimichurri sauce by combining parsley, cilantro, garlic, olive oil, lemon juice, oregano, and red pepper flakes in a bowl. Mix well and season with salt and pepper. Set aside.
3. Preheat the grill to medium-high heat. Thread the marinated shrimp, beef sirloin, red bell pepper, yellow bell pepper, and red onion onto skewers, alternating between each ingredient.
4. Grill the skewers for 3-4 minutes per side, or until the shrimp are pink and opaque and the beef is cooked to your desired doneness.
5. Remove the skewers from the grill and transfer to a serving platter.
6. Drizzle the fresh chimichurri sauce over the skewers before serving. Serve immediately with extra chimichurri sauce on the side.
Enjoy your delicious skewers with a side of sunshine! 😍🔥😋❤️
