Place the pork loin in the slow cooker.
Make horizontal slices about an inch apart along the pork loin, cutting only three-quarters of the way through.
Stuff apple slices into each slit in the pork loin.
Scatter sliced onions and rosemary sprigs on top and around the pork loin.
Drizzle honey over the top of the pork.
Sprinkle ground cinnamon and salt over the pork.
Cover and cook on low for 3-4 hours, until the pork is tender.
Variations & Tips
For a spicier kick, add a pinch of cayenne pepper or a few red pepper flakes to the seasoning. You can also experiment with different types of apples, such as Granny Smith for a tart contrast or Honeycrisp for extra sweetness. If you prefer a more savory profile, consider adding a splash of apple cider vinegar or a tablespoon of Dijon mustard to the mix.
