Layer the Chicken: Place the chicken breasts in the bottom of the Crockpot. Season with salt, pepper, garlic powder, and onion powder.
Add Rice and Liquid: Pour the rice evenly over the chicken. In a bowl, mix the cream of chicken soup, cream of mushroom soup, and chicken broth until smooth, then pour it over the rice and chicken.
Cook: Cover and cook on low for 4-5 hours or high for 2-3 hours, until the chicken is cooked through and the rice is tender.
Shred Chicken: When done, use two forks to shred the chicken if desired, and stir everything together.
Add Cheese (Optional): If using cheese, sprinkle it over the mixture, cover, and let it melt for a few minutes.
Serve: Garnish with fresh parsley or green onions, and serve hot.
Tips
Add frozen vegetables like peas, carrots, or broccoli in the last hour of cooking for a one-pot meal.
For more flavor, try adding a dash of smoked paprika or a few dashes of hot sauce.
