Directions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the shrimp with olive oil, Cajun seasoning, paprika, garlic powder, onion powder, thyme, oregano, cayenne pepper, and red pepper flakes.
Add the sliced bell peppers to the bowl and toss everything together until well coated.
Place a large piece of tin foil on a baking tray. Spread the seasoned shrimp and bell peppers evenly over the foil.
Drizzle the lemon juice over the shrimp and peppers, and season with salt and black pepper.
Fold the foil over the shrimp and peppers to create a sealed packet.
Bake in the preheated oven for 15-20 minutes, or until the shrimp are pink and cooked through.
Remove from the oven and let the packet rest for a few minutes before carefully opening it.
Serve directly from the foil, garnished with fresh parsley and lemon wedges for squeezing.
Variations & Tips
For a milder version, reduce the amount of cayenne pepper and red pepper flakes. You can also add other vegetables like zucchini or cherry tomatoes for more variety. If you prefer a smoky flavor, try using smoked paprika instead of regular paprika. For a heartier meal, add sliced andouille sausage to the packet. This recipe can also be adapted for the grill; simply place the foil packet on the grill over medium heat and cook for the same amount of time.
