Instructions:
1.Marinate the chicken pieces with salt, pepper, cornstarch, and a little bit of oil for 15 minutes.
2.Heat oil in a wok or large skillet over medium-high heat.
3.Add the chicken pieces and cook until golden brown and cooked through. Remove from the pan and set aside.
4.Add a bit more oil to the pan, then add the white parts of the scallions, garlic, and ginger. Sauté for a minute until fragrant.
5.Add the oyster sauce, light soy sauce, and a splash of water. Bring to a simmer.
6.Add the cooked chicken back to the pan, along with the green parts of the scallions. Toss everything together to coat in the sauce.
7.Drizzle with sesame oil.
8.Serve hot with rice and enjoy.
