Instructions:
1. Prepare the Dressing:
In a small bowl, whisk together the plain yogurt, minced garlic, fresh dill, lemon juice, and olive oil (if using).
Season with salt and black pepper to taste. Mix well and set aside.
2. Assemble the Salad:
In a large mixing bowl, combine the chickpeas, diced cucumber, cherry tomatoes, and chopped red onion.
Pour the prepared yogurt dressing over the chickpea mixture.
3. Toss and Chill:
Toss the salad gently until all the ingredients are evenly coated with the dressing.
Cover and refrigerate for at least 15 minutes to allow the flavors to meld together.
