Instructions
Preheat oven to 200°C (390°F). Place chicken, potatoes, and carrots in a large baking dish. In a small bowl, mix olive oil, garlic, oregano, thyme, paprika, salt, and pepper. Pour over chicken and vegetables, tossing to coat well. Roast for 45–50 minutes, flipping vegetables halfway, until chicken is cooked through and skin is golden. Garnish with parsley before serving.
Notes & Variations
Add bell peppers or onions for more variety.
Use chicken thighs instead of drumsticks.
For extra crispiness, broil for the last 3 minutes
