Directions
1. Begin by cutting the watermelon into chunks and removing the seeds.
2. Blend the watermelon chunks until smooth.
3. Strain the blended watermelon through a fine mesh sieve or cheesecloth to obtain 4 cups of fresh juice.
4. Pour the juice into a large pot and simmer over medium heat.
5. Stir occasionally and let the juice reduce for 2 to 3 hours, until it becomes a thick, amber-colored syrup.
6. Once reduced, remove from heat and allow the syrup to cool completely.
7. Store the syrup in a clean jar or bottle and refrigerate.
Variations & Tips
For a spiced version, add a cinnamon stick to the pot while simmering. If you prefer a refreshing twist, add a handful of fresh mint leaves. For a citrusy note, include the zest of one lemon. Each variation adds a unique flavor profile, enhancing the syrup’s versatility.
