Step 1: Preheat and Prepare

  1. Preheat your oven to 350°F (175°C) . Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2: Make the Shortbread Crust

  1. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  2. Gradually add the flour and salt, mixing until the dough comes together and forms a crumbly texture.
  3. Press the dough evenly into the bottom of the prepared pan to form the crust.
  4. Bake the crust for 15-18 minutes , or until lightly golden. Remove from the oven and let it cool slightly while you prepare the custard filling.

Step 3: Make the Vanilla Custard Filling

  1. In a medium saucepan, whisk together the egg yolks, sugar, and flour until smooth.
  2. Gradually whisk in the milk and cook over medium heat, stirring constantly, until the mixture thickens and comes to a gentle boil (about 5-7 minutes).
  3. Remove from heat and stir in the vanilla extract and salt. Continue whisking until smooth and glossy.
  4. Pour the custard over the baked crust, spreading it evenly with a spatula.

Step 4: Bake the Squares

  1. Return the pan to the oven and bake for 20-25 minutes , or until the custard is set and no longer jiggly in the center.
  2. Remove from the oven and let the squares cool completely in the pan on a wire rack.

Step 5: Chill and Serve

  1. Once cooled, refrigerate the squares for at least 2 hours to firm up before slicing.
  2. Use the parchment paper overhang to lift the squares out of the pan. Cut into even squares.
  3. Dust generously with powdered sugar before serving.

  • Add flavor variations: Stir in lemon zest, almond extract, or a pinch of nutmeg into the custard for extra depth.
  • Make it gluten-free: Substitute the flour in both the crust and custard with a gluten-free alternative.
  • Storage: Store the squares in an airtight container in the refrigerator for up to 3 days . Bring to room temperature before serving.
  • Freeze option: Freeze the squares in a single layer, then transfer to a zip-top bag. Thaw in the refrigerator before serving.
