Ingredients:

. 1 cup shredded red cabbage
. 1 cup julienned carrots
. 1/2 cucumber, sliced into matchsticks
. 1/4 cup fresh cilantro, chopped
. 2 green onions, sliced
. 1/4 cup roasted peanuts, chopped
. 1 tbsp sesame seeds (optional)
For the Peanut Sauce:
. 1/4 cup peanut butter (natural, unsweetened)
. 2 tbsp soy sauce (or tamari for gluten-free)
. 1 tbsp rice vinegar
. 1 tbsp lime juice
. 2 tbsp maple syrup or agave
