Make the fritters: Heat the olive oil in a large skillet over medium heat.
Take a generous spoonful of the mixture and shape it into a small burger. Carefully place it in the pan. Repeat with the remaining mixture, making sure not to overcrowd the pan.
Brown the fritters: Brown the fritters for about 3 to 4 minutes on each side, until golden and crispy.
Remove the cooked fritters to a plate lined with paper towels to drain off excess oil.
Serve the hot vegetable fritters with your favorite dipping sauce, whether it’s Greek yogurt, tzatziki, or a simple yogurt sauce.
