Directions
Preheat your oven to 400°F (200°C) and lightly spray a muffin tin with non-stick cooking spray.
In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, eggs, flour, chives, garlic powder, salt, and pepper. Mix until everything is well combined.
Spoon the potato mixture into the prepared muffin tin, filling each cup about 3/4 full.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and crispy.
Allow the puffs to cool in the muffin tin for a few minutes before carefully removing them. Serve warm.

For a bit of a kick, try adding some chopped jalapeños or a pinch of cayenne pepper to the potato mixture. If you want to make them even more indulgent, mix in some crumbled bacon. For a lighter version, substitute Greek yogurt for some of the cheese. You can also experiment with different herbs like dill or parsley to suit your taste.
