1 pound breakfast sausage
1 (30-ounce) package frozen hash browns, thawed
1 1/2 cups shredded cheddar cheese
1/2 cup chopped onion
1/2 cup chopped bell pepper
1 cup milk
4 large eggs
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
Directions
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
In a large skillet, cook the sausage over medium heat until browned and cooked through. Drain any excess fat.
In a large bowl, combine the cooked sausage, hash browns, 1 cup of the cheddar cheese, onion, and bell pepper.
In a separate bowl, whisk together the milk, eggs, salt, pepper, and garlic powder.
Pour the egg mixture over the hash brown mixture and stir until well combined.
Transfer the mixture to the prepared baking dish and spread it out evenly.
Sprinkle the remaining 1/2 cup of cheddar cheese on top.
Bake in the preheated oven for 45-50 minutes, or until the casserole is set and the top is golden brown.
Let it cool for a few minutes before serving.
Variations & Tips
For a spicier kick, try using hot sausage or adding a pinch of red pepper flakes. You can also mix in some chopped spinach or kale for extra greens. If you’re looking for a lighter version, use turkey sausage and reduced-fat cheese. This recipe is also great for using up leftover vegetables you have on hand.
